Chevli / Alsande/ Cowpea Sukke

                           Alsande / chevli as Cowpea is called in Konkani is a very popular legume in Konkani cuisine , Various dishes are made of this – recipes of which are available in this blog . This flavourful veggie can be easily grown in home gardens . This is a storehouse of nutrients and an important source of protein for the body ! Being fibre rich – it helps in digestion too . since this is so nutritious ..we should cook it too- carefully without losing out on its nutrients !

Here is a side dish which includes cooking it in a healthy way !
 

Ingredients :- 

  • Chevli / Alsande – 2 cups or as per need  ( Cleaned and chopped into small pieces ) 
  • Grated Coconut – 1/2 cup 
  • Green Chillies – 2 to 3 or as per spice level 
  • Turmeric Powder – 1/4 tsp 
  • Salt to taste 
  • Mustard – 1 tsp 
  • Udid dal – 1 tsp 
  • Methi seeds – 1/4 tsp 
  • Oil for tempering preferably coconut oil 

Method :-

1. Clean , Wash & chop the Cowpeas . Keep aside . Heat oil and splutter the mustard seeds . then add the Udid dal & Methi seeds , When they turn golden brown add the veggie . 
 2. Add salt and keep stirring on high flame until they turn a bright green like in the pic below .
3. Now lower flame to sim , You can notice that the beans has let off water . Now cover and cook till almost done . 
4. Grind the grated coconut along with the green chillies & turmeric powder to a coarse paste .and add to the beans 
5. Now again cover and cook till done .
 
Serve hot as a side dish with rice and enjoy a healthy meal !
Note :-
 There will be no need to add water cooking this way – thus you save on nutritional value & taste .
