Summer seasons will see a lot of mangoes !! so this is the time for salting away all those extra mangoes to be used when mangoes are scarce and a yearning for mango dishes is there !
So this summer store some mangoes by brining them . Choose fresh mangoes – small immature ones too will do . you may even pick those mangoes which fall down from the tree ( see that they are fresh & insect free ).Wash them well . put them all in big glass bottle or chinaware Bharini . Some also use Plastic ones to store .but please see that they are food grade ones  Boil water along with the salt  & cool . Add this  water and see that the mangoes are fully immersed .. Add  a teaspoon of peppercorns ( to keep fungus away ) & seal well.now your mangoes will stay well . Keep in a cool dry place & check periodically . You may use brined tender mangoes too for this !
Ingredients

  • Brined mango – 1 big or 2 small
  • Green chillies 1-2 as per taste
  • Hing – 1/4 tsp
  •  Coconut oil – 1 tsp
  •  Salt if needed
Method 
  1. Wash the mango . Finely chop the chillies
  2. Now mash  the mango & the chillies well so that they are blended well.
  3. Add the hing & drizzle the raw oil over the dish .
  4. Check for salt . Add only if needed .

Your dish is ready . this simple dish goes well with rice & dalithoy . And also with pejj . being tangy , it is a welcome change for recuperating people to revive their taste  buds .Small children too love this , In that case adjust the spiciness  to mild .
